I don’t necessarily have the time, patience, or appropriate supplies that most recipes I found call for, so I improvised, and the results were ridiculously amazing! Here are step-by-step instructions using my promo-model Mixie.
1.Gather your ingredients:
- 1 Cauliflower head
- Shredded Mozzarella
- 1 egg
- Olive Oil
- Pizza Sauce
- Salt & Pepper
- Garlic Powder
- Basil flakes
- Optional toppings
- Preheat oven to 350ยฐ
2. Turn Cauliflower into “snow”
In most recipes I found, they used a foodย processor to chop the cauliflower piecesย up into snow, but then they had to wringย it out with a towel or cheese cloth, whichย seemed complicated, so I decided to justย kill two birds with one stoneโฆand use myย juicer! (Yes I live in LA)ย So the juicer juiced all the nasty water outย and the pulp it spit out was the Cauliflowerย snow!
It still seemed wet so I microwaved it forย 4 minutes, then used paper towels to soakย up the excess liquid.
If you don’t have a juicer, use a food processor or blender, then microwave the snow, then put it in a clean towel or cheese cloth, and wring the liquid out. Caution: snow is HOT when it comes out of the microwave.
3. Make that Dough
After all of the liquid is out, you’llย be left with the fluffy snow! Now,ย add in your egg, one handful ofย Mozzarella, and your spices, andย mush it all together with your hands.ย (Please wash them first)ย ย In a matter of seconds you’ll beย able to form a dough ball, like this!
Then, spread butter on a piece ofย Parchment Paper on a “pizza stone” if you’re fancyย and have one, if not, a tin pan works, and push the doughย down and out into a circle, makingย sure it’s not too thin or too thick.
4. Bake the Cauliflower Dough FIRST
Bake the dough without the toppings first. I estimated by checkingย every once in a while (aka my ADDย sidetracked me) but after about 20ย minutes it looked golden like this!

5. Add your toppings
Spread your pizza sauce, add your cheese, and any otherย toppings you desire, then bakeย for another 10 minutes or so,depending on how crispy you likeย your pizza.We tried 6 cheese blend and gorgonzola, and maple bacon, gorgonzola cheese, and arugula and it was amaazzinnggg. Both pizzas were devoured in under 5 minutes…even the guys loved it!
