How to Easily Make Sushi Balls – Tsukiji Sushi Class in Tokyo

Any sushi fanatic knows that the Tsukiji Fish Market in Tokyo is the number one place in the world for top quality tuna, and is where the majority of the world’s supply comes from for restaurants. Actually, I didn’t know that until I went there, and I love sushi, especially tuna, so let’s just write that off as a fun fact and move along.

Anyway! As I said, the Tsukiji Fish Market is where all of the best tuna gets brought in, and where everyone (in the sushi industry) goes at the crack of dawn to aggressively bid on fish and prices. You can watch the chaos if you feel like waking up at 4am to get in line to be one of the 120 people allowed in when the bidding opens at 5am, but that’s up to you. I did not do that.

I did something that I thought was much more interesting. Instead of watching the giant fish get hauled away to be turned into sushi, or stopping at one of dozens of food stalls to the left of the wholesale area, I decided to learn how to make the sushi myself. What better place to do that than at the actual Tsukiji Cooking and sushi making class, right?

Located IN the actual Tsukiji Fish Market, just a short lovely walk from where I was staying at the Park Hotel Tokyo, is the chef-grade kitchen and classroom where Tsukiji Cooking holds their classes. I was greeted by an adorably cheerful professional sushi chef who has been making sushi for over 25 years! Her and her assistant who also doubled as a translator and awesome video-helper showed myself and the other “student”; a food writer from Denmark, to our seats, where we were equipped with the necessary tools and ingredients to make our sushi.

But I didn’t just learn how to make traditional sushi rolls and nigiri pieces; I also learned an amazingly easy and awesome way to make sushi balls! I hadn’t heard of them before, but they’re pretty much genius; instead of an oblong nigiri sushi that you have to either cut, bite, or shove in your mouth, they are bite sized sushi pieces, and they’re really easy to make! Here’s how:

1. Gather Your Sushi Ingredients

The cool thing about taking a sushi class at the famous Tsukiji Fish Market, is that you can buy all of your fresh ingredients there!

The first thing you of course need to decide, is what ingredients you want to put on your sushi balls. For your first attempt you can maybe start with the basics; shrimp, crab, salmon, tuna, just make sure it’s all sushi grade and Ok to eat raw! Then you get the accompanying ingredients like avocado or cucumber, and of course the sushi rice. Here are the ingredients for the sushi balls I made:

  • 2 small slices of salmon
  • 1 slice of octopus
  • 1 small shrimp sliced in half long-ways
  • 1 small piece of avocado
  • Japanese or California rice
  • rice vinegar
  • wasabi
  • toppings (egg, capers, caviar, etc)

2. Gather Your Sushi Making Supplies

Do not underestimate the stickiness of sushi rice!!! Make sure you have a water hand-dip bowl and wet towels!

Luckily these sushi balls don’t require the traditional bamboo mat that you need to master to make sushi rolls, now do they require any knife work aside from the slicing of your ingredients. In fact, all you really need are a couple of items that you probably already have!

  • One medium sized bowl for your rice
  • One spatula for stirring the rice
  • One medium sized bowl for dipping your hands in
  • Plastic saran wrap
  • Wet napkins or paper towels

3. Make Your Sushi Rice

This ain’t no Minute Rice! There’s a full technique to making sushi rice!

Sushi rice is a bit tricky to make. It’s not like regular rice that you can just steam and serve; sushi rice has to be somewhat sticky, in order for it to take shape and stay that way. You also need to use a certain type of rice, either Japanese or Californian, and special ingredients like rice vinegar, in order to make it.

Here’s the measurements for the ingredients:

2 cups of Japanese or Californian white rice

3 cups of water

1/2 cup of rice vinegar

1/4 cup white sugar

1 teaspoon of salt

1-2 teaspoons of soy sauce

Once you have those ingredients here’s what you do:

  1. Rinse the rice off with water, then put it in a little pan with the water and bring it to a boil. Once it starts to boil, reduce the heat to low, cover it, and let it cook for 20 minutes. Then let it stand to cool off on its own.
  2. In a small saucepan, combine the rice vinegar, oil, sugar and salt. Cook over medium heat until the sugar dissolves. Cool, then stir into the cooked rice using a spatula to fold the rice rather than stir it and make it mushy. Keep fold-stirring until all of the liquid seems spread out and the rice becomes sticky.
  3. This part isn’t in typical recipes, but my sushi instructor showed me how pouring a little bit of soy sauce in the rice helps make it more manageable, and also adds to the flavor!

4. Form Your Sushi Balls

Best trick ever: Use plastic wrap to form a little ball out of sushi rice!

So here’s where I learned the best trick quite possibly in the world…you can use plastic saran wrap to make cute little sushi balls!!! Well, you can technically also use them to make those oblong rice lumps for the nigiri sushi too, but let’s keep our focus on the balls. Ok so for starters, keep in mind that we want these to be bite-sized, so don’t go crazy with the amount of rice you use!

Here’s the steps:

1. Take a square of plastic Saran wrap and lay it over your left palm (do the opposite if you’re a lefty)

2. Use a spoon or spatula to scoop a bite sized amount of your sushi rice into the center of your palm, on top of the Saran wrap

3. Gently curl your hand up over the ball of rice so that the Saran wrap encloses it, then use both hands to twist the Saran wrap together at the top of the ball, and gently mold the rice into a ball.

4. Before unwrapping it, dip your right hand in your water/vinegar solution in case you need to touch the rice (this will prevent it from sticking to you).

5. Unwrap the Saran wrap and gently roll or place the ball onto your plate or work area.

6. Repeat steps 1-5 to make two more balls or however many you’d like to make.

5. Add Your Ingredients to Your Rice Balls

Cut your ingredients into bite-size pieces so they fit on your rice ball

Once all of your rice balls are formed and ready, and you’ve cut all of your ingredients to sizes that will fit on the rice balls, here’s what you do:

Add the sushi ingredients:

1. Lay a new piece of Saran wrap over your palm.

2. Lay your ingredients down in your palm first.

3. Add a touch of wasabi (if you want) to the underside of the ingredients that will be placed on top of the rice.

4. Dip your other hand in the water/vinegar solution then use it to gently place a sushi rice ball on top of the ingredients.

5. Twist the saran shut closed again and gently mold the ingredients onto the top of the rice ball.

6. Unwrap the plastic wrap and voila! You have a sushi ball!

GARNISH: To add garnishes to your sushi balls, just think of what would typically be inside of a sushi roll or on the side of the plate; we used capers for the salmon sushi ball, and caviar for the squid one, then little pieces of cut cucumber and ginger to decorate the plate!

I started my blog in 2012, then started using social media to promote it in 2014, earning me the title of “influencer”but what was never fully seen was the entrepreneur behind it who helped create an entire new industry with no money and when hardly anyone believed it would work.

Soon after I became one of the first travel blogger/influencers to make a full time living from it, I was asked to speak at conferences, interviewed in the press, and I was one of the very first people to make the courses about how it’s done (they didn’t exist when I started!)

I had a big dream to get paid to travel the world, and to normalize solo female travel, and once I succeeded, I kept going.

So far I’ve been to over 150 countries (off the 197 list), all 7 continents (Antarctica 4x), and I average 20 countries per year.

Now I’m going bigger. I’m launching a travel show, more speaker events, writing another book, and I’ve started the Travel Tribe Foundation to give back through my group trips.

  • I thought I was going to shipwreck trying to get to an existing shipwreck in the Solomon Islands…and I was traveling solo with just a fisherman driving me on his small boat. 😳

But! We made it, even with a massive storm approaching, and I experienced one of the most incredible “my life’s a travel movie” moments in my 12 years of continuous solo traveling!!

I truly felt like I was in a movie! The ship is an old cruise ship that hit rocks and slowly sank as it washed ashore on Roderick’s Bay. It’s only half sunk, so you can swim around it (it’s super creepy and dangerous, don’t do it alone), and since it’s completely unregulated, you can also climb it and zip line into the water (also dangerous, can’t recommend)

The angle of the ship also created one of the most vibrant marine sanctuaries I’ve seen in a while, with lots of actual colorful coral and fish (including clown fish!)

I went to Solomon Islands after my second trip to Papua New Guinea, on my quest to slow solo travel to every country in the world.

Would I go back to the shipwreck? Probably not. That boat ride was terrifying. But I’d go back to see more of the islands in the Solomon’s, there’s so many!

  • D. R. Congo and Silverback Gorillas both have reputations for being extremely dangerous, and that’s true, to an extent. But hear me out.

First a disclaimer: I am one of the most experienced solo female travelers in the world, and I also have a degree in Animal Science plus extensive experience with wild animals. All of my animal encounters are ethical, researched, and done with professionals. My goal is to promote responsible animal tourism that actually benefits and protects the animals, Don’t try to do any of them on your own!

Ok so the Mountain Gorillas! Yes, they can be extremely dangerous! However, many of them have been socialized, and are therefore accepting of human visitors (and very curious)

Gorilla trekking tourism is what protects these beautiful animals, because it generates more money to have them alive, so it forces the govs and other orgs to implement strict rules and anti-poaching efforts!

In fact, these gorillas were almost poached to extinction before trekking became popular, and now most of the trackers (people paid to find the gorillas to trek to) are former poachers! 

I’ve gone gorilla trekking 5 times and it’s always a safe and beautiful experience (the trek is difficult though and can be up to 8 hours through thick jungle)

Now about D.R. Congo…. Shortly after my first solo travels there, Virunga National Park closed and remains closed due to armed conflict with rebel groups..:

I still went to visit Goma several more times, and I truly love Congo, but I will be waiting with anticipation for the safety to increase, because the gorillas in DRC were my top favorite see!

  • I have a “bucketlist tattoo” that I add to when I complete a major bucketlist check! This one was a double check: seeing a wild Polar Bear and reaching my farthest latitude north (so far): 82 degrees North!

For reference, the geographic North Pole is at 90 degrees North, so we were very close to it! Maybe one day I’ll reach it!

There’s only one tattoo shop in Longyearbyen, therefore it’s officially the northernmost tattoo shop! And I also have tattoos from the Southernmost tattoo shop in Ushuaia for my 4 trips to Antarctica!

  • This is my 3rd year being an American living on a vineyard in Italy (married the owner!) and I def have a lot of tea/wine to spill about it 😂

People have this dreamy or glamorous “Emily in Rome”-esque idea about traveling to Italy, falling in love, preferably with someone who owns a vineyard, and living happily ever after…well I did that, and it can be a bit more “difficile vita” than “dolce vita” at times!

  • I’ve swam with Orcas, a crocodile, and my for-fun hobby is shark diving, but I draw the line at poisonous swimming snakes. 🙅‍♀️🐍 It really just came up to me like that when I was sitting on the beach on an island in New Caledonia! 

I had been contemplating going swimming with the turtles nearby, but changed my mind after I saw this!

This was a “Blake-banded Sea Krait”, common to this area in the South Pacific Islands, I’ve heard several divers say they’ve seen them! But no thanks, I prefer sharks. 😂

Animal safety tip: as an experienced animal encounteress, i never ever suggest provoking or trying to “fight off” any dangerous animal that isn’t actively trying to attack you. Stay calm and still and let it pass like I did in this video. Then, feel free to run. (Jk I’d still suggest carefully and slowly backing a way, keeping an eye on it).

The currently viral @shebara resort in Saudi Arabia with UFO looking over-water bungalows! Costs around $2-4k per night and doesn’t include the transfer to get to the island…

Probably the most bizarre hotel I’ve ever stayed at is this one in Turkmenistan. It’s known as “the wedding hotel” bc it’s where most people have their receptions, but the ground floor wing behind me is open for tourists….except, I was the only one there and it seemed like it had been empty for a while..

You can’t book hotels on your own in Turkmenistan, you have to take a tour and have a letter of invitation. Full blog post with that info too.

I’m scheduled to return to Turkmenistan in October and also next year with @mylifesatraveltribe (sold out though, join the waitlist!)

I never would have guessed I’d end up living on a vineyard and recalling @pacheca.group The Wine House as inspo for a future rental project!!

These wine barrel rooms are in Portugal. Who thinks I should try to build some on our vineyard in Sardinia Italy?

One of the bougiest hotel experiences is at @anantaramaiaseychelles ! The villas are beautiful but it was the 24/7 butler service that I can’t forget!

The Seychelles was my 100th country, and they brought me enough wine bottles to write out the number in my private jacuzzi!

One of my all time favorites is @tulia_zanzibar 😻 it’s one of the most beautiful, thoughtfully designed, sustainable resorts I’ve experienced, AND it has a water slide!

Scotland surprised me a lot with its incredible hotel options! Namely, all of the castles! There’s so many of them!!!

  • Yes, that is a real, wild Crocodile. Yes, I swam with him (several times) Would you dare?

This is Panchito the Crocodile, he lives alone in Casa Cenote which is close to Tulum. Crocs are not commonly found in cenotes (pronounced “seh-note-ay” and are deep fresh water reserves throughout the Yucatán peninsula ) and no one is really sure how he got there.

Panchito is allegedly “friendly”, but it’s more like “unbothered until provoked”.

Recently for the first time ever Panchito attacked a swimmer because some unintelligent people were throwing rocks at him to try to provoke a reaction for a video 😡

Even this last time when I was there, while I was freediving in the cenote, other tourists were loud and slashing at Panchito, causing him to interrupt his tanning session, jump into the water, and dive under the mangroves until the people were gone (I watched all of it and was honestly a bit scared when he came swimming towards me underwater).

Anyway! If you want a unique wildlife experience, check out Casa Cenote but do not disturb Panchito!!! Or any wildlife! Animal karma is real!

D. R. Congo and Silverback Gorillas both have reputations for being extremely dangerous, and that’s true, to an extent. But hear me out. First a disclaimer: I am one of the most experienced solo female travelers in the world, and I also have a degree in Animal Science plus extensive experience with wild animals. All of my animal encounters are ethical, researched, and done with professionals. My goal is to promote responsible animal tourism that actually benefits and protects the animals, Don’t try to do any of them on your own! Ok so the Mountain Gorillas! Yes, they can be extremely dangerous! However, many of them have been socialized, and are therefore accepting of human visitors (and very curious) Gorilla trekking tourism is what protects these beautiful animals, because it generates more money to have them alive, so it forces the govs and other orgs to implement strict rules and anti-poaching efforts! In fact, these gorillas were almost poached to extinction before trekking became popular, and now most of the trackers (people paid to find the gorillas to trek to) are former poachers! I’ve gone gorilla trekking 5 times and it’s always a safe and beautiful experience (the trek is difficult though and can be up to 8 hours through thick jungle) Now about D.R. Congo…. Shortly after my first solo travels there, Virunga National Park closed and remains closed due to armed conflict with rebel groups..: I still went to visit Goma several more times, and I truly love Congo, but I will be waiting with anticipation for the safety to increase, because the gorillas in DRC were my top favorite see! I have a “bucketlist tattoo” that I add to when I complete a major bucketlist check! This one was a double check: seeing a wild Polar Bear and reaching my farthest latitude north (so far): 82 degrees North! For reference, the geographic North Pole is at 90 degrees North, so we were very close to it! Maybe one day I’ll reach it! There’s only one tattoo shop in Longyearbyen, therefore it’s officially the northernmost tattoo shop! And I also have tattoos from the Southernmost tattoo shop in Ushuaia for my 4 trips to Antarctica! Anyone else have cool tattoos? ——————- For anyone new here: Hi! This is my 3rd year being an American living on a vineyard in Italy (married the owner!) and I def have a lot of tea/wine to spill about it 😂 People have this dreamy or glamorous “Emily in Rome”-esque idea about traveling to Italy, falling in love, preferably with someone who owns a vineyard, and living happily ever after…well I did that, and it can be a bit more “difficile vita” than “dolce vita” at times! Shall I give the full interview for the “real Netflix documentary about an American living in Italy”?? 😂

I’ve swam with Orcas, a crocodile, and my for-fun hobby is shark diving, but I draw the line at poisonous swimming snakes. 🙅‍♀️🐍 It really just came up to me like that when I was sitting on the beach on an island in New Caledonia! I had been contemplating going swimming with the turtles nearby, but changed my mind after I saw this! This was a “Blake-banded Sea Krait”, common to this area in the South Pacific Islands, I’ve heard several divers say they’ve seen them! But no thanks, I prefer sharks. 😂 Animal safety tip: as an experienced animal encounteress, i never ever suggest provoking or trying to “fight off” any dangerous animal that isn’t actively trying to attack you. Stay calm and still and let it pass like I did in this video. Then, feel free to run. (Jk I’d still suggest carefully and slowly backing a way, keeping an eye on it). What would you do if you saw a swimming snake?! —————— For anyone new here: Hi! It’s known as “the wedding hotel” bc it’s where most people have their receptions, but the ground floor wing behind me is open for tourists….except, I was the only one there and it seemed like it had been empty for a while..

You can’t book hotels on your own in Turkmenistan, you have to take a tour and have a letter of invitation. Full blog post with that info too.

The Seychelles was my 100th country, and they brought me enough wine bottles to write out the number in my private jacuzzi!

One of my all time favorites is @tulia_zanzibar 😻 it’s one of the most beautiful, thoughtfully designed, sustainable resorts I’ve experienced, AND it has a water slide!

Scotland surprised me a lot with its incredible hotel options! Namely, all of the castles! There’s so many of them!!!

Yes, that is a real, wild Crocodile. Yes, I swam with him (several times) Would you dare? This is Panchito the Crocodile, he lives alone in Casa Cenote which is close to Tulum. Crocs are not commonly found in cenotes (pronounced “seh-note-ay” and are deep fresh water reserves throughout the Yucatán peninsula ) and no one is really sure how he got there. Panchito is allegedly “friendly”, but it’s more like “unbothered until provoked”. Recently for the first time ever Panchito attacked a swimmer because some unintelligent people were throwing rocks at him to try to provoke a reaction for a video 😡 Even this last time when I was there, while I was freediving in the cenote, other tourists were loud and slashing at Panchito, causing him to interrupt his tanning session, jump into the water, and dive under the mangroves until the people were gone (I watched all of it and was honestly a bit scared when he came swimming towards me underwater). Anyway! If you want a unique wildlife experience, check out Casa Cenote but do not disturb Panchito!!! Or any wildlife! Animal karma is real!
